Vintage wine in minutes, not years.

The video is a bit painful to watch, but it seems a process using electrolysis has been developed that simulates the aging process of vintage wines in only minutes, rather than years. The result is a smoother, more mellow, wine. A california wine company is currently experimenting with this process on their wines.
